charcoal or electric fire source, pan of liquid about 12 inches over that and then meat rack over the liquid, lid on top... liquid means moistness to the meat..

Yeah I agree with Geauxt on the water smoker thing. I've got a big one that I hang the leg from the top. Just watch your heat and keep it low and slow and that shite will give you strange sensations in your pants.

DO NOT FORGET!!!!

Use the scraps and the bones for beans later.

Also, throw some taters in your water and pull them after they get cooked. Then the next day make hash browns out of them.

probly the bestest for the leastest is the brinkman electric water smoker... steady heat, water doesnt boil out, don't have to get up and add charcoal to a 20 lb turkey in the middle of the night... plug her in and go to sleep or do something different... I guess i like em ok,,, ive got about 2 or 3 of em, counting house, camps, etc.
after u plug in, put lid on,,,, dont take it off..
