I think I know what you're talking about, I stumbled across it whenever we cooked a couple of whole mangroves on the pit.

Everyone kept asking me why I was trying so hard for the meat only to realize after they tasted it that they were missing out!

On snappers, there is a hardish plate that you can feel some meat under. It's shaped like an upside-down triangle. Anyway, you can feel it out. Under that one plate is a piece of meat about the size of a chicken mcnugget. Seriously fantastic. The cleanest, most tender meat you will ever try. It even holds its texture in the fridge, so cold nuggets make a fantastic breakfast.

Gotta go electric with the specks.

Always. I use the electric for bass, bream, specks, sacalait, etc etc etc. Only time I don't is when I only have a few fish, or for reds and cats because I don't have that many and I get more meat out of it, and I find it easier.

I don't even do that. I'm not master fileteteteder (sp?), but I get the job done.

You need to try it. It makes it so much less work and you almost never end up with stray bones.

No problem. At 2 fish per person, it's even sweeter.

More incentive to get every piece of meat you can off of them!

I am proud to say that I have never used an electric fillet knife on any fish I catch.

If I have over 5 fish I'm using an electric. I'm not ashamed. that shite takes too long otherwise.

Catch 100 trout in the middle of the summer and your methods will change.

We usually clean enough to eat that night, and throw 20-30 fillets in the freezer. We give away everything else.

With me, everyone who's a part of the catch always takes their share. I love to eat some specks.

We have a bunch of stuff in the freezer. Usually a few gallons of my moms homemade jumbo, jambalaya, etc. We occasionally load the freezer, but we usually catch a limit or two when we go, and my dad is lazy and makes me clean everything. I clean what we want to keep and we give the rest away.

If I got to the point where I was catching enough fish/killing enough deer to run out of freezer space, I'd probably go ahead and buy another chest freezer. And throw a lot of parties.

Our chest freezer is pretty much full of deer right now. Need to eat a bunch to make room for fish
