A family member out of state developed a new lot, built a house last year, and dock pilings installed over the winter. I believe the dock is mostly finished minus some final things like lift, power and water. The only other addition is some leftover construction sand as a "beach".

This is on a public lake in a flooded timber slough, although most has decayed by now. Water is drawn down ~10 ft in winter and we plan on doing some work this fall/winter for family fishing. Looking for bass, bream, and crap-a-sach-a-perch.

What would you do to attract fish? We are thinking pea gravel bed opposite of the beach. Also thinking of some sort of underwater green lights (paging wickowick). Should we add some structure under the pier itself? Should we build some PEX/PVC structures and sink them farther out in the slough... how deep for summer?

I would be working on the shoal to the left of the new dock and around into that little cove. Maybe even make that cove the beach instead

The beach sand should be on the left side where is it already shallowest... You'll lose a lot less sand that way

any decent size structure you pick up and move should be in a pile 8-12 foot of water off that point

Get you an 8 yr old out there with a Zebco 33 on a 6' 6" med action rod, 10 lb test mono, peg cork, #5 split shot, #8 cricket hook, and a 2 month old male cricket. See how far he can cast. Whatever you decide to put out as structure, don't put it farther from the bank or pier than that distance.

The dock itself is great structure, sink the family christmas tree underneath it each winter. Put up a feeder.

This, but also not a whole lot closer then that. If you have a bunch of structure right off the dock you end up fighting snags as often as you fish.

Best thing you could do is invite me over a week before or a week after you plan on having family there. Because the bite is always on fire a week before or a week after I go fishing.

Wish I had some actual advice but this is way out of my wheelhouse.
