SW or Red pass are the easiest with no sand bars everything else requires some knowledge.
Rig hop until you find the snapper and amberjack will of course be deeper. Snapper can be shallow like 80’ and sometimes shallower rarely do I catch amberjack in less than 250’ but I’m sure it can be done ( I am also sure 20 people will disagree because it’s the internet) just my observations.
