I am actually reading a book right now about Louisiana history right now and apparently the state of Louisiana was loaded with Bison when they would migrate down. The theory is by the 1650's through 1750 the population of bison actually boomed because of all the natives dying off from disease from the explorers that was introduced in the 1500's. There are records of Bienville (or it could have been Iberville I do not remember) killing lots with the natives on the north shore of Lake Ponchatrain.
Apparently there are still trails from Bison throughout the southeast, but most were turned into roads.

The bayou bucks site had a great Iberville story. They saw bison in or on the edges of lake maurepas.

Started Reading Way Down Yonder: Plaquemines Parish and then picked up The Hidden History of The Mississippi Sound which is not only Louisiana History, but that was the book with a chapter about it.
