Looking for high temp cheese

Anyone know where i can buy some hi temp cheese for sausage making? Im in pike county. Anything between jackson and hammond would be nice. Would like to smoke sunday with cooler temps but none of the major online retailers can get it to me before 2/24

I get mine from oak grove smoke house in Prairieville. That may be a bit out your way. Their sausage seasonings are good also if you end up going there.
