Its easy to find google is your friend, you need it to be 6-8% mostiure check it buy a mositure meter. You should only pay around 6 bucks a board foot.

I wish it was mine, my dad had some pecky cypress and made the kitchen cabinets doors at the camp with it. We found a 20ft cypress log at the camp that was sunken by our dock last year. It heading to mill next week to get cut in to boards.

There's a feller near Marksville that has sinker cypress and he cuts to order as well.

Another wood that you would really think about is pecan
It's extraordinarily heavy but I made my parents a table out of it several years ago and it turned out great.
Much cheaper than walnut as well.

If it were me - I'd go find an old barn or warehouse building that's being torn down. Buy some of that wood and invest in a decent planer or find a shop that will let you plane that wood. You may even consider doing a tongue and grove kind of set up to help prevent warping.

I have over 100,000 board feet of exotic hardwood (32 species) on the Northshore, and a shop to resaw to size.
