big difference b/t a cheap rental yak and a solid fishing yak. Jackson, Hobie,etc are popular brands. just find a good yak dealer that let's you demo them and see what suits you.
you can also save a few hundred bucks by going used.

For the price of two brand new fishing kayaks you could buy a used drift boat or used fishing raft. For river fishing there really is no question on which is the better option.
Do you want to stay dry? Do you want to be able to stand? Do you want to be able to float through higher class water? Do you want more storage? Do you want to be able to anchor safely?

Hell even a one person inflatable pontoon is more comfortable to fish out of than a kayak. Sure the kayak would be better in slower water but on smallmouth/trout rivers being able to backrow a more stable boat is 100% the way to go.

There are some very stable yaks out there that are great for standing up.
KC was mentioned. They are very stable but are very prone to cracks and leaks. At their current price, I would look somewhere else. You can get a great, stable and durable kayak for less than they charge for the KC.

Depending on the water situation on these floats, there are kayaks better suited for rivers. A few Jackson models, Nucuanoe would be a good one.
Just make sure it is a SOT with scuppers. Something like a Commander or Ultimate would work but not ideal if you know for sure you are going to flip
