How do you clean specks?

Do you cut the meat near the rib cage? I was checking out this video and didnt realize until now that this may be controversial. Seems like this is kinda like “breast the duck vs plucking whole bird” issue some people get up in arms about.

I use a blade and cut through. I've seen that video and people complaining about wasted meat.

I cut from the butt to the pectoral fin and that cuts the rib cage out. Then filet normally

You will lose meat doing that method on trout under 16 unless expert. I clean hundreds of trout less than 16 and if you go real flat you can avoid bladder on first cut, pull it out then flip and finish. Rinse then repeat.

I cut the angle behind the head, slice the belly and pull out the air bladder. Only takes a second. If you still have to clean the rib cage after, what does it matter to go a little more and clean the entire rib cage?

That is the only way I have ever cleaned a trout.

I usually do it that way as well. I have done both ways a few times for comparison and have seen very little if any wasted meat & it's much faster for me. You can still save the roe that way, FYI.
