I keep stabilizer in it but I did put some seafoam in the tank sunday

When it dies pull the plug and check for fire. Had a bike recently do this, rectifier was going out. If that’s not it you could also pull the petcock. It may be dirty and not flowing the fuel fast enough or the screens on the pick up lines on it are partially clogged.

My money is still on needle & seat. Those needles have a neoprene tip and will get stuck, but still leak fuel by. It may slowly fill the bowl overnight even though the float/seat are stuck in the up position.

Under the fuel on/off/resv valve should be a small fuel bowl an I believe there is a mesh filter in it. If you are not getting a full flow when you remove fuel line from carb I would start at tank and work towards tank. Rule out fuel tank valve clog.

Had a big red do the exact same thing years ago. Determined it was the coil going to the plug. It would start but once it heated up it would cut out. Replaced coil and had no more problems

Sounds like like a fuel problem. Check the carburetor's needle valve and give it a cleaning. Also might as well replace fuel lines as they can eaten up by the gas over time.

Disloving gas lines may have been caused by using ethanol. Glad you got her going again.
