some reason this year all my family members gave me backstraps, I ended up with like 8. one of them I cut thin, soy sauce, Worcestershire, garlic and a little Italian.

This ain't duck. No need to marinate...especially backstrap.

I cook it all different ways, but if you are grilling, I like to wrap a 6-8" section in as much bacon as it takes to cover. Then put on a medium-hot grill turning occasionally until bacon is cooked. That leaves it a good medium rare inside. As far as for seasoning, I just use a little olive oil, salt, pepper, and maybe a little Tony's.

I usually dont marinade when I cook it whole


But when I cut in pieces to make bacon wrapped hors d'oeuvres , I marinade it in pepper jelly.

The Garlic Sauce is AWESOME!!!

I add it to almost all my marinades now.

My favorite is to grill shrimp with it.... INCREDIBLE!
