124g 9mm is subsonic out of most pistols and SBR's and is about as close as you can get to just barely subsonic with an off the shelf normal ammo. It makes for a cheap too shoot round that still has a decent trajectory and is really quiet.

I haven’t found a factory load my Ridgeline 300WM doesn’t like. And it really loves cheap Norma Whitetail 150 gr

This! I love this set up. My daughter killed her first deer with it a few years ago shooting subsonic 45-70 ammo. 400+ grains moving subsonic still carries a lot of knock down power. Within 100 yards there's not much bullet drop in comparison to other smaller subsonic rounds in my experience. It is quiet and doesn't have much recoil at all with subsonic ammo. Probably about the same if not less than an AR. It still kicks like a pack mule using supers though.
I think you can definitely hunt ethically with subsonic ammo as long as you don't try shots the bullets aren't designed for and stay within 75 to 100 yards with your shots. Also, make sure you're using subsonic ammo designed for hunting that expands quickly upon impact and the lower speeds and not using FMJ bullets.
My son killed his first deer using subsonic 308 at about 50 yards. perfect shot and the deer ran about 30-40 yards and dropped.
I shoot the following suppressed with supersonic ammo:
270WSM
308
300WM
300BO
6.5Creedmoor
7mm-08
It takes most of the recoil out of all of these calibers including the 300WM. My daughter who is now 12 has no issues shooting it. I rarely hunt without a suppressor these days.
