I've hunted low man in the totem pole picks the ducks for so long on family land.. Problem for me.. I'm still one of the low me. until my kids get old enough. When I hunt up near Stuggard we drop them at this ladies house and she cleans them and packages them for I think 3 a bird.

We get ducks picked for 2.50 and geese for 3.50...don't always use it, but it's a damn good option to have. This is in Jones, though.

If you were closer to the Opelousas area I could help. I run a homeless ministry and we have a duck cleaning service.
$2/duck
$4/goose

if i don't just fillet the breast meat out, i've found that plucking the breast only and pulling the whole breast off is a good middle ground does away with all of the pain in the arse plucking, but you still get some skin/fat which will be better for making a gravy, etc.
I do this. I does pretty good.

I've got a buddy out that way. I'll give him your email. Sounds like a great thing you're doing. Best of luck this season, hope you get plenty of business.

pluck breast
put duck on the ground (hard grond like concrete or wood) on back
put a foot snug on each wing close to where it meets breast
pull it by the legs
you will get the leg/ thigh meat too, if you just skin them
