Does fish out of the freezer do well in ceviche?

I've only ever made it with fresh fish before. Anyone have any experience with it once you freeze it?

I would not have a problem if it is some fish that you (or someone you know) caught and froze the fish...however, I wouldn't risk it with fish that you bought...

I've done it with redfish but I also throw it on the grill and smoke it for a few minutes when I'm done. Citrus BBQ flavor is great

I've done it plenty with yellowtail, ono and mahi. The biggest thing to consider is how well it was prepped before freezing. If it was vacuum sealed while very fresh and then immediately frozen you can still do anything with it within a 3 to 6 month window.

Considering how many guys throw their fish in a igloo cooler with a frozen bottle of water, I think you are wise.
ETA: if you eat ceviche while dining out you are probably eating frozen fish. But that fish is frozen quick. Not sitting in an ice chest, then sitting in heat while cleaned and bagged. A lot of the ceviche I've enjoyed was not fresh.

I've made it with frozen specs and it's always turned out good

Should be fine, let us know if it has a fishy taste or it mushy? I've only done it with fresh fish so interested in hearing how it comes out.
not to derail thread but I defrosted some Tuna i had in the freezer for 8 months and boiled it in crab boil and made tuna salad yesterday and it come out great!

It's perfectly fine as long as you didn't abuse it before freezing. Same goes for shrimp and scallops.

i "enjoyed" some not so fresh conch ceviche in Nicaragua. got sick for two days and shite the bed. I firmly suggest that you do not eat bad ceviche.

There is a very good chance it was not the fish that made you sick but something else that was part of the dish.

Yeah. Like the water. I've gotten amoebic dysentery twice in Nicaragua. Didn't "drink" the water but just eating salad that was washed in it did it to me.
