I tried deer ribs - once. It may taste good when cooked a different way, but it left a sticky film on the roof of my mouth and I swore never again.

When I was a kid we would cut the meat from between the ribs and throw in the grinder. My old man was old school, and reminds me of a quote I heard about old timers butchering hogs- "they didn't waste nothing but the squeal".
When we got through processing a deer it looked like a bunch of buzzards had been on it.

My Nonc Jr. use to cut the meat off the ribs and make a Sauce P'caunt with them, it was excellent. He was a Back Vacherie legend, could make anything taste good.
