I will take some pictures next time I clean some ducks. If I ever get to kill some. This teal season is the worst I have ever had in my 45 years of living.

I agree with you 100 %. My Dad would have never let me shoot another bird if I didn’t clean it all the way. And we killed ducks by the hundreds.

Duck hunting in the 60’s and 70’s was more fun and productive using pirouges, paddles and push poles.


No one grilled ducks. They were cooked n a pot the proper way.

Never could bring myself to breast a duck. Feels like a waste. They make good duck pluckers now. We had a “Naked Duck Phuker” we used.

I remember being able to take 10 male pintails in a limit at Johnson Bayou.

Yeah… waste of money! Unless you’re shooting a shite ton of snow geese or something.

But it’s perfectly ok to breast certain birds. You can still save the legs, heart, and gizzard. I guarantee that more meat gets wasted in peoples freezers.

I’m not talking about breasting mallards, wood ducks, teal, etc. But I just wanted to clarify so new folks that read this don’t think they have to pluck their divers or snow geese.

Not geese, but if you need to do ducks, step on the wings and pull the legs

Snow geese and/or spoonies. Other than that either pluck the birds you kill or pay someone to do it for ya!

Why don't you give us some of the ways that you and your chefs prepare your ducks. Please be honest and only share the processes that you actually use yourself.

Us, "dumbfrick" Coonasses would like to be edumacated by geniuses like you.

As a dumbfrick coonass, I like duck gumbo... or duck and oyster gumbo
I started rendering the fat down to make my roux's also.
Fried duck legs and wings for when we do something different with the breasts

One year we saved a bunch of hearts, livers and gizzards to make dirty rice

Plenty of other ways to cook them besides just in a black pot

Don’t mind him… he was sure to show up and share his superior duck killing and cooking expertise. Cut him some slack, there’s surely some pain from his past that draws out all that anger. His old lady might have been running around with a coonass, given all the animosity he shows towards us.
