I’ve agreed to donate several cases of catfish for a catfish plate fundraiser. The organizers haven’t offered any meaningful guidance about what size and grade of fish I should procure. Pretty much all they’ve said is they would prefer we not get nuggets and they don’t need them pre-breaded, they will thaw and prepare them.

Does anyone have any experience with this kind of thing? Any advice would be helpful and appreciated.

Tell them to give you an invoice, write the check, and let them worry about all that. YOU’RE donating it, that’s your part.

My local Sam's Club sells Delta Pride Catfish Fillets (3-5 oz. fillets, 15 lb. case) for $75.98.

Get basa fillets. Cheap, doesn't taste fishy, and it's what almost every restaurant serves.

Basa is asian catfish, but Asia is allowed to get around FDA rules, because they classify the fish as separate from Catfish family, which completely screwed the catfish industry, and the reason that only a few farms are left.

While basa might taste better, it's still a shite Asian fish, and you have no clue what they are putting in the fish or feeding them, no FDA restrictions put on them, like the catfish farmers.

It's like idiots who eat Chinese Tilapia.

While I appreciate the advice, I only want USA catfish. It’s a little more expensive but it’s a thing with me that I don’t knowingly buy Asian seafood.

My Basa comment was for the guy recommending it, i always recommend staying away from Asian fish, unless you have 2 get it.

Your comment is the one I was agreeing with, without having to retype what you said. I'm with you. It may not have been so clear, but I agree with your description of Asian fish.

Since you’re obviously buying a lot, you might be better off buying direct depending upon what processing plants are in your area, but that can become a hassle.

I’d tell them to get whatever they want and just write a check for the invoice.

Geauxtiga answered the question. You give the money, they get the headache.
