Looks good. I’ve aged two in the fridge before, one spoiled and the other was excellent. If you haven’t tried in on deer, a sous vide is a wonderful thing on any cut you leave intact and sear.

A sous vide is going to be my next kitchen purchase. I want to try my friends first since I normally eat meat with a cold center.

Nice! I've been wet aging some backstrap this year. Kept one in fridge for 20 days. It was pretty damn good.

Impossible. That white hair gets everywhere as soon as you cut it. It doesn't hurt anything since you can trim the silver skin off.
