bullshite, every women I know in Springhill has gain 20-30 pounds from this, and most all of these are super health nuts. My wife has been a size 2/4 her entire life, then in one month she gains 20 plus for no reason with no lifestyle change. That’s bullshite

hormones will effect how we absorb food, whether we store calories in fat or not, how we retain water etc…

I don't know that much about women's metabolism but logic would suggest the difference in BMR for a woman post menopause is directly related to their body no longer expending energy on their reproductive cycle. Men's reductions in metabolism are grossly overstated traditionally but there is no doubt women's bodies spend a decent amount of energy replacing blood and all the other expenditures related to their cycle.

You said she ate a max of 1,200 calories per day. 20 pounds of fat is ~70,000 kCal so she would have to be eating about 2,300 kCal a day over her BMR so if she indeed gained 20 pounds in a month she is gorging on bonbons in the dark like Ginny Sacramoni.
ETA I should have noted this doesn't take into account water retention which women suffer from more often than men. That being said based on the 1,200 cal remark this isn't a large-framed woman so they would start to display symptoms of excess fluid even at 4-5 pounds. Shortness of breath, diarrhea, nausea, swelling in the lower extremities and feeling full all the time.
