Get back to me when the lab cookies have evolved for a few millenia like the process you just described.

This POV makes no sense to me: chemistry is chemistry.

You can go into a lab and combine potassium cyanide, ammonium chloride, and an aldehyde (none of which you would want to consume) and get amino nitrile. That can be hydrolyzed into a completely safe amino acid. For those that forgot O Chem that is Strecker Synthesis.

Did Clark Griswold come up with this?

He was working on developing a "crunch enhancer," a non-nutritive cereal varnish designed to coat cereal flakes and prevent milk from making them soggy.

From what I understand about the process:

They grind the PET, then mix it with organic waste, water, and oxygen, then apply heat and pressure to reduce it to a slurry of long carbon chain molecules.

The genetically modified yeast eats it and poops out proteins and fats (similar to yeast eating sugars and crapping alcohol).

Add starch, fiber, and flavorings, and you get a paste that can be extruded into a cookie.

The organic waste will give you the N and P you need for some fats and protein along with other things to make vitamins and provide other micros.

Yet people freaked out about a completely harmless process like irradiation.

As long as they don't make that horrible crackling sound of water bottles while you are eating them.
