Thanks to economics. Thanksgiving and Christmas means people buy more hams. More hams means more "extra" pig parts that I won't bother to detail here. More extra pig parts = McRib. That's why it's only available this time of year.

Not true. McRib is labeled as a LTO (limited time offer). The country is divided into advertising co-ops based on the marketing DMAs. Each year the owners get a list of approved LTOs they can bring in, along with time of year it's available. It's usually in the Oct-Feb period, although lately it's been a lot tighter (Nov/Dec).
Not every market brings it back as it performs at different levels across the country. The South typically does very well with it. However, the results are great for a few weeks before it starts to fall off quickly. That's why it only appears once a year.
