It was my understanding that the original heisman was never displayed in the restaurant to begin with. I was told that it was a replica

Incorrect. The trophy in the restaurant is Billy Cannon's Heisman. LSU has its own trophy on display in the front foyer of the football admin building. Each school gets a trophy as well as the player.
