I don’t call them at all.

The best thing to do is figure out their pronouns prior then when you meet them say "are your pronouns xxx? Yeah I thought so you look like they'd be xxxx"

Really throws their whole world reasoning out the window.

Go with SHe-He-It , and say it really fast. Then they can't complain you didn't at least touch on whatever fantasy they have about themselves, and were technically being as inclusive as possible.
