The weight gain is not because of the gall bladder removal, though digestive issues are not uncommon. Just because you are eating "healthier" food doesn't mean you are eating fewer calories and consider if your activity level has decrease.

Your think backwards on this, if you cant breakdown fats as well, then you will crap them out rather than digest/absorb them. But you live generally delivers mare than enough bile for your fat digestion needs with you gallbladder. Gall Bladder info

This guy explains nutrition in a very digestible way with great detail. I would look around for videos of what you are looking for and other general food topics. You'll find other great stuff there with regards to hormones, depression, etc. too.
