OTOH, filets at Texas Roadhouse aren't even the best steak on the menu. (TBF, I had to look up what a "Seven Steak" is

Its that Filets are vastly overrated for the price.
My favorite cut is a ribeye.
I'm not saying seven steaks are the best...just underrated for what they are.

You got all of the underrated ones correct, but all of your overrated ones are actually rated just right. John Denver was a fantastic songwriter, Charles Dickens’ prose is some of the most beautiful ever written, and red beans & rice are not sumptuous, but they are not rated that way, either, and they are quite good.

7 Steaks are served with rice and gravy and quite tasty that way.
Monday was 7 steak rice and gravy in my house when I was a kid. Tuesday was meatballs rice and gravy, Wednesday was leftovers.
The bone is shaped like a 7 and I've never seen it served in a restaurant other than This is It Soul Food in Houston (it was rated in the Top 5 annually back in the day) A favorite for execs from Downtown Houston in the 1980's, for lunch. The best part of going there was the day the large black lady serving (cafeteria style) told the head of our Houston office, "You don't want any of that white boy." when he asked what something was. He grew up in Buffalo, NY and about shite himself before saying "Yes Ma'am" As for me, I laughed my arse off.
