I knew it was a show, watched part of it before, but if I was told there would be a camera crew coming in to film a guy doing certain jobs as part of a new show show or something like that, I would have not thought "oh.. I bet its really that undercover boss show"..

It also depends on where you work. The company I work for now is in the media quite often. So is the company my husband works for. There are always film crews in his building for different reasons. So in some places it is not as weird as others.
