i actually can't understand why some gas cooktops are 3k and others 500.....it seems like possibly the simplest appliance in the entire kitchen, or even house.

Main reason is BTUs and thermal range.
A Viking, Wolf, or other pro-grade range is going to get much lower (simmering) and much higher temps than a $500 basic range. And the build quality is much higher.

Supposedly it can tell if it's on through an app. And if you have the matching range hood, you can turn that on remotely. That's all I've been able to tell... seems very pointless.

I've been looking into all of this and each has their pros/cons. Distance between cooking grate surface to burners (affects time to cook), flatness of grates, knob quality, finish holding up, position of knobs, etc. Other than the distance metric, the others appear in any of a few reviews on any one product. It's frustrating

I haven't had any issues with scorching, granted mine is only a year old.

I read some bad reviews on Bosh too. Then I used one of my friends. I went with Bosch and have no regrets.

One of the main reasons I bought my house was (aside from being a complete gut job reno) was the awesome kitchen with a 36in Bertazzoni Range and Hood. I looked it up and the hood was almost $2500 alone ...but it's also a dual-blower restaurant-style hood that's actually vented outside the house.
A 36in is sooooo much nicer to cook on than the standard 30in.

Yeah, we host a lot of family gatherings. 36" is the minimum. Also, 2 ovens are a must.
Plus I like the center burner for daily use as it is centrally located under the hood for most efficient exhaust.

this is a must IMO if you're going with a big arse BTU gas stove.
first improvement i made when we bought our house was to cut a hole to the outside for the hood because i knew i was going to be putting in a gas range.

I simply cannot understand vents that do not vent outside the house... What is the purpose?

That's why I like the restaurant style hoods. Pop the baffles out and put them in the dishwasher when they start to get greasy.
That dual blower hood I have can ventilate the entire front part of my house if need be. It's a beast

Looking hard at this one now. Lots of great reviews. The only slightly negative reviews are the rubber feet on each of the grates that may get crushed or worn, causing an uneven surface. Have you had any issues with this?
My wife loves cooking and her pots get very heavy at times with what she churns out, so I'm just concerned about this.
