Maybe not in Alaska, but they definitely do along the gulf coast. There are literally entire trades where I have never met a single worker who spoke English as a first language.

Wife and I built a 350k house in 2015 with 40% down (no gifts, our own money) and we were in our late 20s.

Go to any DSLD subdivision and you will be lucky to find an English speaker outside of the foreman.

Construction trades are the only real area where labor unions function correctly. Those guys are hired out of the union hall, and their benefits come through the union (though paid by various employers) and they get lifetime training in union classes (usually paid for by industry and/or Government)
Unions still work in the trades where workers are Journeyman, and they are better quality usually than non union help
Illegals arent getting these jobs without massive shenanigans.

That doesn't mean the main contractor subbing out the job isn't "above board".

A roofer isn't a middle class job, dude. A guy who puts up fences isn't someone with a middle class job. You're talking about low skill labor which has always paid shite, regardless of who they are. The owners of these businesses do well, not the workers.
Teachers, fire/police/EMS, secretaries, truck drivers, plant supervisors, nurses, etc... These are middle class professions. Illegals aren't stealing these jobs.

Look, I have been a local contractor forever. Very few independent guys are paying union dues because they don't need it. I have had one plumber in 20 years who was union and when he got to a point where his SFH work outnumbered everything else he dropped the dues and BS so he could hire labor. They were an obstacle to his business.
There is a lot of work out there where a union is not needed for tradesmen and yes there are illegals working as HVAC techs, plumbers, etc.
You and mmmmmmmmcreampie can pretend that isn't happening but I am telling you 100% it is. Go to Coburn's today and you will see HVAC and plumbers pull up to buy parts, who aren't union, and have Mexican techs with them.
