There was a place in Savannah, GA that made banana pudding the way my grandmother did. Very rare to see that anymore.

Yeah those buns were good. Everyone agreed. Kinda a last minute grab, we usually use Dave’s bread (buns) as they hold up well to the burger, but these did too.

First time doing the smashed burgers with thinly sliced onions right on the burger. I like that style. They did cook down all the way too. Called the Oklahoma onion smash burger.

I prefer the sliced raw but partially cooked looked good too. When I think about going more and browning them I think more caramelized and making it separately with like cooked mushrooms and a red wine + real unsalted butter reduction.

I just researched the Ok onion smash burger it looks like good eats.

If I caramelize the onions I do that in the bacon fat right after I pull the bacon and then set aside.
