D.R.E.A.M.S. Foundation of Acadiana. All they do is sponsor activities for special needs kids, with the long term goal of building a community for the kids to live in as adults. Great people.

Shriners and, St Judes are both great options. Food banks are also really struggling right now. You may want to see if your employer matches donations.
