Don't see the problem. You told her when you were available. When she asked about tomorrow (Monday) you should have said "like I said, I can't do it until Wednesday. If you can wait until then I will be more than happy to help, if not then you will have to make other arrangements".

Like someone else said, what happened is she misread the initial text and thinks he said he could not Wed-Fri. Even if she went back and casually reread it, I bet she still misreads it.
