Hence, measuring how stressed someone is while doing a thing is NOT a measure off that thing's innate level of stress
I'm really trying to see your point. I mean I kind of agree, maybe 20%. Yeah, there are outside issues like being a broke waiter and making this month's rent and bills. And usually wait staff is on the minus side of 30, being all full of piss and vinegar and hitting the gate running towards life, so to speak. So yeah, maybe they haven't necessarily learned how to cope with stress as much as a more mature person has learned.
But man, that is all chicken shite compared to operating on something so complex as a human brain - day in/day out. I imagine that would not only be a stressful thing to do, but would certainly contribute to the level of stress in a person's life. No?
And then you could say maybe the doctor isn't worried about "making rent" but has bigger bills to pay, like student loans for med school, maybe by now child support and alimony on a failed marriage, etc.

Neurosurgeon's are highly intelligent, very well educated people who undertake years of training and apprenticeship. All of the above would do a lot to reduce stress levels.
Essentially, you can probably assume that neurosurgeon's are highly confident people and a lot of stress comes from not really having a good level of self-confidence when facing the task at hand.

So I've got a friend who is a bright guy and picks up things quickly, he's also a Former so he's got a "hell, yeah, I can do it" attitude.
He tells me the other he thinks he can do brain surgery, he really doesn't think it would be that tough. (shrugs)
I have another friend who is an actual retired neurosurgeon.
He tells me the actual brain surgery isn't that tough, that he could teach anyone to do it in a day
or so.
This is a true story, BTW, so I don't know WTH is going on.

I don't agree with the survey
I worked as a plumber while going through college. At the end of the day I left work and didn't think of work till the next morning when work started again.
Now working an office job I wake up at 2:0 am and work pos in my mind. Sitting at the dinner table. Thought of work. Watching TV, work. You can never truly relax at times.

Plumbers don't have to deal with dozens of pretentious people everyday who think they are Anthony Bourdain
