Georgia Dome and MBS have flipped the SECCG for a Falcons game 10+ times.
In today's age of digital scoreboards, LED ribbons, etc... it's by no means an impossible task. Props to the workers who do the heavy lifting overnight, but, this isn't a new trick.

It's not a big deal to repaint turf and clean a stadium in a day. They are decorating it 6 days in advance because they can at this point and there is no rush. I'm not sure how much "decorating" is really required in the first place

What does that have anything to do with flipping a stadium on short notice? It gets done because it absolutely has to in those situations

Weird melt. My guess is they would have played the divisional game in the Sat afternoon slot.
The field markings can be quickly replaced, and you might have some in-stadium signage to replace, they would just work overnights to do it.
As far as practicing, they could certainly practice on the field. The hash marks might be a little off, but no big deal really.
Police, fire, EMS, are used to handling multiple big events.
About the only issue I can think of would be hotels for the fans of whomever the Saints were playing, they might have to stay in Biloxi / Baton Rouge.
