It's not impossible to do at all. But it's definitely high intensity if you are burning off that many calories. Likely something you aren't able to do every morning and every afternoon. I burn about 600 calories in an hour. Any more than that and I may have to give the legs (running or biking) or arms (swimming) a rest as I'm spent. And the higher intensity may lead to an increased metabolic rate over the next 24-36 hours, but nothing close to what I would be able to burn if I got another actual workout in.
But as others have said, if you are looking to build muscle, it's not happening on the elliptical.

In shred season I do cardio AT MOST twice a week. Anything over that is overkill imo

..unless you're on a 8 mph pace, there is no way you're burning 500 calories in 30 minutes on an elliptical machine.

Average 7mph at high level of resistance. It may be around 450 but then I just go a few extra minutes

What's your diet like?
You would have to eat 4,000+ cals per day to not run a deficit, but since you're trying to cut, I would guess you're in the 2,000-2,500 cal range per day; maybe less.
You would shed 2lbs every 3-4 days if those calorie burned estimates were accurate.

Well I have a wife and my upper body is pretty jacked so don't see the point in working out lower body...

What is your height and weight?
In my experience people who only look at the scale tend to get into a cycle of not ever being satisfied.
If your goal is to only lose weight, you may lose muscle mass too.
Then, it goes like this:
Month 1: "Dammit. 175 and I still don't look that cut. Why is that ab so small? I need to lose weight."
Month 2: "166 and I still don't have the definition I want. Should I lose more weight?"
Month 3: "I'm 155 and I still don't understand why I don't look ripped. What should I do? Go to 150?"
It can get dangerous when you have tunnel vision and only look at the scale.
My take: throw the scale away. Measure your waist, your arms, thighs, chest. You want a small waist? Then you want big shoulders. Start lifting and doing things like cardio and yoga so you can be functionally fit. Go beyond the numbers on the scale.
Eat well. Don't neglect your fats.

Don't neglect legs.
Squats & deadlifts naturally boost testosterone levels. If you're avoinding those, you are hampering your ability to maintain good muscle mass.

I know because I've been there. Now I'm 170 pounds with big pipes and a 30" waist.
