Question about Galvanized Steel vs. Aluminum Wall Panels

I have a commercial kitchen project under construction and need to make a choice on material a long interior hallway. On the hallway walls we plan to have (i) 6 in. baseboard, (ii) metal panels up to 3-4 ft. and then (iii) laminate wood planks above.
Couple of questions:
1) Pricing. We priced out 20 gauge galvanized steel panels at $1.40 per sq. ft. How do aluminum panels typically compare?
2) Quality. Would there be a reason to go with one of these materials over the other? I imagine the most that will be impacting the metal panels are carts that our clients will be pushing between our storage facilities and the kitchens.
3) Patterns. Can both galvanized steel and alumnimum be patterned (e.g. with swirl patterns)? How much more cost does doing this usually add?

Aluminum will be twice as much. For durability use FRP panels.
Also check the health code on both of those.

Galvanized steel will start to get a patina on it (rust) over time as well. It won't dent as easily as aluminum, so it matters what look you are going for in the long run

Do you think rust would be an issue even in an interior space?

You wont have have any problems with galvanized steel rusting in an air conditioned place. I highly doubt it will get a "patina" as well.

Galvanized is cheaper in price and against corrosion/rust but still would do the trick I’m sure.

If sheets are corrugated, you may need to run a 1x (or wider) horizontal where the sheets and planks meet to cover the exposed edge of metal. Galv corr sheets are a good arch look. I assume it's not in a prep area. You prob already know only stainless steel, ftp or tile is NSF.

No. Just a hallway between our kitchens. Each kitchen has its own door and so no food prep happens in the areas where there'll be galvanized steel.

You may want to consider stucco embossed for a “pattern” or even galvalume but plain aluminum would be very expensive.
