And a lot of customers are dishonest. Maybe not a lot, but enough are out there that if a dispute shows up online I automatically believe the business, unless I know and trust the customer. The majority of customer complaints stem from failed attempts at theft by extortion.

I once saw a case where a customer wanted to return a medical device that had been fully covered by her insurance but she wanted the refund to go to her instead of them. When the company refused to help her commit insurance fraud she took to Facebook.
Way to crack down on tat kind of crap is felony prosecutions for extortion and theft. That type is usually so stupid that their own side of the story is an admission of guilt.

No. But unfortunately bonuses are often paid out on Press-Ganey satisfaction scores that subscribe to the fast food model, and not the evidenced based medicine model.

No, they don't read signs, they don't read menus, and have zero situational awareness. The obvious service area where all the food comes out is not the place to walk through. It is also not the place to get mad because you almost knocked over someone else's food walking the wrong way to the bathroom.

The waitress hasn’t come by in an hour. We thought it was as self serve. Management taught all the employees that customers are idiots and should be ignored

I worked retail for 6 months after college. Never again. I understand it was my job to serve the customer, but it got to be ridiculous. Many of them were incredibly rude for no reason, many were crooks and thieves, many saw themselves as some VIP that could talk to me however they wanted. Working retail made me realize just how shitty people can be. I'm just glad I was never a waiter.
I had a customer come in who wanted a pair of baseball pants for her son. The game started in just a few hours and she waited until the last minute to pick them up. They had to be white Under Armour pants with red piping down the side. Well we had sold out of all those pants and wouldn't be able to get more on the floor until the truck came in the next day. Of course she is disgusted and can't believe we don't have any and that I won't make a pair magically appear out of my arse. She calls for the manager and makes a scene. She goes on this tirade about how it was our fault that we didn't have any more of this very specific pair of pants. Granted, we had the same thing in different brands, but apparently the coach or league mandated the brand be UA. She went on for probably ten minutes. I quit not long after that.
So, no. The customer is not always right. The customer is usually wrong and is just trying to get something for nothing.
