Every activity for kids is the same, whether it's sports, scouts, theater, dance, 4-H, swim team, whatever. Parents fricking suck. It has always been hard to get volunteers, but it has gotten progressively worse since covid.
They won't volunteer to lead, but will talk shite.
They won't show up to build sets, clean up, help out, or work fundraising events. But they will sit in their fricking cars the entire time.
They won't volunteer to chaperone to get ratios to required levels, but will complain will trips get canceled.
We have started to require parents to have a minimum contribution, where we are allowed to so. How hard is it to donate 1 fricking hour on a Saturday? We've also started tracking fundraising to the family level, allowing it to offset fees. The families that don't do shite have to pay more out of pocket.
I have 3 active kids and I travel for work, yet some fricking stay at home tennis mom will tell me she is too busy to help. Like she can't take time out of her affair with her tennis coach to support her kid for an hour?
Maybe I am salty, but I did just spend 7 days at camp supervising 30 kids, surrounded by a thousand other kids doing kid shite.

It’s pretty clear from this thread the concept of volunteering is completely lost on people. The OP is 100% right.

I volunteer coached for many years. In my experience, you have a parent meeting before the season starts and set goals and expectations on the season. You set a practice schedule, tell the parents what dates you plan on going to tournaments and lay it all out before them. Then you tell them what the cost would be per player and let them decide if they want to participate.

If we are talking about rec ball (and it sounds like we are), the OP has a point. Some parents have figured out that Little League is the cheapest babysitting service in history and then have the gall to complain that it isn’t perfect. 10 games plus 10 practices at 2 hours each is a minimum 40 hours of the coach’s time, and I promise you that he is doing much more than that behind the scenes. As a parent you get all of that, and you feel a sense of ENTITLEMENT because you paid $250. The coach is a damn volunteer here and doesn’t see a penny of that either. Get out there and start helping, or quit complaining.
I feel you OP. I coached many Little League teams, and for the most part, the parents are fantastic and it’s a very rewarding experience. But a small number of parents make you want to never sign up to coach again. LINK

Volunteered for 6 seasons (3 asst, 3 head coach) and I always hated rescheduling, but if I'm the only one volunteering and have a scheduling conflict that day, tough to the parents. If they don't like it, they can always run practice. I did when I was an assistant.
The problem I've noticed recently, is the Dads that show up to every practice and every game, and don't want to assist running practice despite me asking. It can suck sometimes being the only volunteer coach running a tee ball practice with 13 kids or a flag football practice with 11.

If you're a head coach who doesn't have nine kids of your own to make a team you might not want to piss off the other parents and kids too much.
Or get your kid into tennis.
