FWIW, dairy and oats are 100% not paleo.
I usually do an 80/20 paleo diet one month a year. I do feel better and find my digestion is better. However I love bread, beer, and cheese too much. YOLO

Deck chairs on the Titanic. The standard American diet is to have excess of both. That is the problem. You sell atkins or keto to people with the line "eat all you want of...." Same for vegan and fork over knives people. Eat potatoes and rice until you bust.
I feel true balance is what is needed. Realizing that meat for humans is a luxury and eat it as such. Should be your smallest portion. And putting tons of dairy products in your carbs is the American way as well.
Life long balance is what is needed. THAT is the hardest part. You can go pure Vegan or pure Keto for short periods to lose quick weight. But you will not sustain either. You will always cheat.

I do not disagree but proper context is needed
If you are a relatively lean and active person, you have a different relationship with carbs than the typical American
If you are a typical American (obese, diabetic, sedentary,etc), you have a toxic relationship with carbs. An asymmetric, carb restricted diet in those folks make sense. Once in lean /active mode, carbs and "balance" can be reintroduced.
Prior recommendations are one size fits all. Proper context and individualization is needed (although some of the broad strokes are becoming clearer).
My favorite paradigm is one called "feed your activity level" proposed by Chris Hardy in Strong Medicine. No macronutrient is completely vilified. Balance in all aspects of life is emphasized.

I always propose an "eat like an Asian" diet. "I need to eat this bowl of rice to LIVE so I can work and provide for my family...." Eat to live, not live to eat. At its purest.

That is built into the plan
If you are completely sedentary - gravitate to well sourced diet mainly of fat, veggies, fiber, greens, moderate protein (limit /restrict carbs)
If /when you are active, add back well sourced carbs on those days
You will often get some positive reinforcement /reward behavior from this association
PS : you should consider a standing desk. Plenty of data on the hazards of chronic sitting
