Do you store yours in the humi with or without the plastic wrappers?

Depends on how well you keep up with your humidor.
I personally gave up the humidor hassle. I keep mine in the tube/wrapper and in the plastic bag that the store puts them in upon checkout.
I've never had a dry one since.

Keep them on and use it to write the date on if I want to age them.

Either way is appropriate. The plastic protects the outer wrapper though. Humidity still passes through the cellophane.

Nah, I typically buy two or three at a time and smoke once a month.
Good thing is, the nearest walk-in is at a liquor/beer store where I live, so I remember to grab a few more when I'm out restocking on booze.
ETA: Once a month in the off season. During football season I smoke every LSU halftime per tradition.

How far down do you like to smoke it? Smoked a Perdomo tonight with my father in law. I find that they start to taste like an ash tray about a half inch from the band.
Although I find myself getting a little light headed from it, but I typically keep smoking on it until it gets too hot to hold.

Go by taste. Most cigars turn at a certain point. (ashtray taste as you mentioned).
There's no "right or wrong" for any cigar. I've had $15 sticks turn really early, and $2 sticks that I've smoked to the nub. It all comes down to the particular leaf when rolled.

I usually smoke to the band. Many of my smoker friends purge their cigars when they get to that point. Light you'd lighter and blow through the cigar.

When I first started smoking, anything past an inch from the base would get me nauseous. So I'd have to judge upon feeling.
Eventually, I grew to counter the feeling, and that's when I could tell by "taste." When the taste changes, the stick is done.
Unless I'm drinking...then the nub/heat becomes the end.

Cool. My humi setup is pretty low maintenance but if that works for you, good to go.
