I live in West Knoxville and absolutely love it. Right by the Smokie mountains, a few miles from the lake/river. And there are seasons, but not miserably cold winters or crazy hot summers. Its my favorite place I've lived. Highly recommend, but we've got enough people. ??

And then there is NASCAR at Bristol.
There is also Thunder Valley and NHRA Drag Racing.

The Tri-Cities Area is nice: Bristol, Johnson City, and Kingsport.

I think the thing you have to be most cautious about in a move like that is the isolation from other bigger cities/metros. No, you aren't on an island or anything, but assuming you're calling Knoxville your home metro area, and you live out of Morristown, your next biggest metro is Nashville 3.5 hours away.
Is that insane? No. But if you live in Louisiana I think you would be surprised how quickly you get used to having multiple cities with their own distinct cultures/identities within 1-2 hours in any direction.
It gets a lot more isolating than you think initially. Boise was great, and it's a bit more isolated than that area, but after 6 years there one of the reasons we relocated was because the next biggest metro was 5 hours away and it sometimes felt like we were on an island.
Not saying that will happen to you, just saying that it's something to consider.

During the summer time we have summer league baseball played here. Kingsport, Bristol, JC, Greeneville and Elizabethtown all have teams with some good players. Usually Wednesday is all you can eat and Thursdays is for beer specials at all the stadiums. Definitely worth checking out.
Kingsport doesn't really have much going on but it's nice, just a lack of unique food options. JC has a lot more interesting things to do but it also is kinda turning into mini Asheville. Bristol has the Hard Rock casino now and some good low key eateries. Plenty of good people in the area and traffic is pretty miniscule. Outdoor options galore. Watauga Lake is stunning

A lot of fat redneck women who spend their time calling child protective services on each other.
