So just spoke to the third company about the Owen's Corning product. They use something called ProArmor synthetic underlayment. Claim it won't rip and only use 30lb felt if someone is insisting (should I be?). Also said they don't use metal in valleys any longer, but a peel-and-stick product. That seems kinda wonky to me, but is it the standard now?

This is becoming much more common. It is referred to as "storm guard" or "ice and water shield.

They lace the valley, giving it a more modern look insted of using metal valley, and it also does away with penetration/leak points since you are not cutting in and running valley metal.

California cut is just the shingles butting in the valley and not cutting to show the valley metal. Ice and water sheild (or storm guard which is the GAF brand) should be used in all valleys in addition to the metal. Don’t let them tell you no metal in valleys. If you don’t want to see the metal then just tell them California cut .

Ice and water shield should be double layered in the valleys as well.

Honestly, I think you would be better off just buying some decent quality shingles and paying a reputable installer. I have found that the time horizon is just too long to benefit much from anything that is guaranteed for life.

Leaks generally show up pretty quickly after installation and I think you have plenty of leverage to get things in proper order at that time.
