ETA: seriously, I would recommend you buy a Frommer's book for Amsterdam (or look on the website). I have found them to be very helpful, as they list most all of the attractions in an area and are pretty straight up about telling you which ones are good and which are not worth your time...
they also typically have suggested iteneraries for short stays so that you hit the good stuff...

Also, Van Gogh Museum. Rembrandt Museum. Diamond cutting facility so you can see how hucksters make money off of worthless, compressed carbon. Wax Museum. Parks are nice. They sell beer in vending machines.
I missed out on the local food, which is something I'd like to have done more of.

The Heineken tour is actually really cool, and I'm not a Heineken fan.
Go to a breakfast restaurant and eat Poffertjes. Thank me later. There was a little pancake place across from the Marriott that sold the best ones we had.

It's really funny you posted that. I googled, saw all the barrels, and was like, "shite, I drank at that place." Went to look through my photos and sure enough, it was that place. Highly recommend it. The people there were awesome and the drinks were even better. I guess I should be surprised now, but it really wasn't crowded at all.

Not a huge party atmosphere, more casual drinking and they have a limited but decent menu of odd dishes.

Gotta hit up a coffeeshop or two. Wok to Walk is great munchie food. Rent a bike and ride around Amsterdam. The entire city has bike paths and there's more bike traffic than cars

Browerij 'tij is a local brewery with a great selection, they're under the giant windmill on the east side of town.
If you're into American craft brews, there's a spot called Beer Temple that has a ton, though it's a little pricey.
Also, there's a great cocktail bar in the Jordaan called Tales & Spirits
