Sounds like you made the right choice!
It got above 40 this afternoon and the wind was calm. With the sunny skies, it was actually pretty nice. Much better than 20 degrees, sleet and a 20mph wind.

If a plumber ran the line, there's almost certainly a valve that can be closed. If it was a DIY operation, who knows?

There’s absolutely no valve behind the fridge and the line disappears under the house. The plumber said he didn’t see a shut off valve under the house. The fridge really isn’t that close to the kitchen sink but it’s possible it could be there. I’ll check when I get home

It’s also very possible the idiot I bought the house from ran it himself. I wouldn’t be surprised if he did.

People frequently run them below the countertops by drilling through the sides of the cabinets. Obviously, that isn't what happened at your house. If they went down behind the fridge and came back up under the sink, the third water line should be easy to follow.

It's also very possible that it's tied into a line under the house. If it is, there probably wouldn't be a separate valve. Too hard to get to.

Had this happen to me not long ago. Guy had a water line to the fridge with no shut off. I had to shut the water off to the house to fix it.
Another time the shut off was way down the hall in a bathroom. Yet another time it was a tap valve in the attic with a saddle valve. Some diyers piss me off.
