Senor, I'm no chef but I can say that those are definitely...

I think they should serve him a fajita for every meal for his whole time in jail. I love me some fajitas, but after 90 meals in a row, I would feel like I am in hell.

This reminds me of the story about the lunch lady in Atlanta who set up a cart in the cafeteria, would sell a la carte items, and pocket the cash. Apparently, it also went on for years before someone blew the whistle on her.
I think people do these things for so long that they just get lazy.
Atlanta lunch lady stole $1M
It happened in New Orleans too but it was with popsicles ( or fruit juices) which the lunch ladies then sold for a dollar or more each. The money was then pocketed.
All kids were on free lunch so everything should have been free to the kids. NOT free to the lunch employees to steal and resell.
The principal also had a sketchy side business selling blow-pops. He did not allow anyone else to sell them, only him and he pocketed the cash.

Whoever is the auditor there is going to have to find a new job
They probably will, but this isn't on them. Auditors don't get to decide the menu items. Escamilla wasn't exceeding budget and every purchase was approved by every level of management.
The person at fault here is Escamilla's boss, who signed off on all this shite that wasn't in his kitchen.

I don't know. This strikes me as one of those crimes where you maybe should put the guy to work rather than punish him.
He made a fricking fortune off fajitas.
