I have experimented all my life, the art is getting the egg cooked right (can not leave unattended).


One group is the relish / pickle crowd
Other group would never use either (I am in this crowd)


One of my better received versions was "Green Eggs & Ham"

For the base filling mix I added avocados to get a lovely green color. For the topping I used some butcher cut porkbelly baked in the oven with a bourbon and sorghum glaze. Made several dishes and that and the old school Mac n cheese were the first thing to run out.

On a note, as avocados will turn brown quickly you are best to go from kitchen to table.
