I’ll go first.
Nathan’s all beef hot dogs, on outdoor grill. Once done with nice grill marks, take them off. Put open bun on grate and lightly toast, maybe 1 minute. Remove.
Dog in toasted bun, one very light line of mustard down length of dog, generous amount of chili on top, then very generous amount of finely grated sharp cheddar on top that.
Pop it in microwave for 15 seconds. That heats the cheese and gets a good melt started, but maintains the toasted nature of the bun. Otherwise bread gets soggy.
Serve 1 minute later, when cheese is now fully melted, and dog is not too hot.
I like chili dogs basic, without any additional fanfare.

Good call Paige. Some people don’t like them but you’re right, they make it perfect. But only if the onions are finely chopped, and on top.
