Gotcha. Sorta like how Deano's OG is so much better than Deano's South. Gotta properly season the cooking apparatus for several years to get the desired effect. Do new restaurants get hand me downs from old ones so that all have consistent food? Or is it a situation where over time everything gets greasier? Staff, building, griddle, customers...?
