Hey Chocs, I heard you were melting down in the GMT. Please tell me there's no truth to this vicious rumor.

You could say that. But it was provoked as usual.

Hoe do you see that... What it really sounds like was that I was going about my way, minding my own bidness and your pal sucker punched me for fun, so I hit back. No conspiracy there like you think.

It’s all about the skill of the cook and the quality of the ingredients.
Maybe cooking came naturally for me but I haven't found a dish yet that took legitimate SKILL to get right. Most of them, given quality ingredients and cookware, will turn out great by simply following a good recipe. Take sous vide for example; grab a pair of 10oz prime filets from Rouses, S&P - maybe some rosemary, sous vide anywhere from 45min to 2 hours and sear quick with some butter.
Hard to mess up. Posted on 8/15/18 at 1:01 pm to macaronithepony
well skillet often says v v mean things about me
but it's usually my fault for not posting for a week or something
so there's some truth to it

I finally caved and bought one on prime day. It's stoooopid easy. As much as I enjoy grilling steaks outdoors, the SV comes out perfect EVERY time. I set it at 131* - start the sides maybe mashed potatoes or grilled zucc or squash, then 45 min later I pull them out and sear 30sec on each side. DONE. Perfect Medium Rare.
Next time I have guests, I'll cook them SV then hide it.
finish them with a quick sear on the grill and no one will know.
