My exact same experience and opinion after giving them 3 or 4 chances and buying different items.
They’d be as good as the cult here that worships them says they are, if they’d back off of the pepper so I could actually taste the other ingredients they put in their products.

I go to MD Anderson every three months and pass through Scott on the way. I usually stop and get a few links on my way to Houston and then pick up some frozen on the return trip. To me Billy's is way too damn spicy/hot. It is almost too hot for me to eat and the last few trips it got to where it wasn't even that tasty despite the pepper. I started getting the Best Stop mild boudin and it is worlds better than Billy's in my opinion. I have also had Bourq's a couple of years ago and it is some fine boudin but my favorite from there is the boudin egg rolls.

Give Bergeron’s on 415 a try, boudin’s good and pepper jack wraps are delicious. Convenient drive thru too.

I’ve had Bourque’s boudin at their place in Lafayette. It’s good but also prefer Best Stops. If its not too far out of your way consider trying Johnson’s in Lafayette (near St. John and University). It’s good there, IMO.
