Not a casino related but I have a friend that plays at Prime Social in Houston. It's been a while I talked to him but the last time we talked, he said one of the partners who goes by the name of Dean Maddox used to collect the money every Monday. He said prior to going to his car, he would sit in the 1/3 game for a bit and there would be two bags full of cash next to his chair. The rental on that building is around 50k a month.

Exactly my point. You have zero risk, all profit tool to attract a certain customer to your place of business.
